A hot pan and splash of olive oil. Frying your eggs in olive oil adds a great contrast in texture between the running egg yolks and the crispy underbelly of the sunny side up eggs. Too much emphasis is put on a colorless omelet or fried egg but honestly, fuck that. This tastes better and adds a uniqueness to your texture profile. Make sure your pan and oil is properly preheated so when you add your eggs they start sizzling and browning up right away. Splash the oil in the pan over your egg whites with a spoon to make sure they cook thoroughly and in time before your egg bottom go too dark. “When it’s brown it’s done, when it’s black you’re done.”
2 TBL ev olive oil
1/2 tsp fresh thyme
1. Preheat the frying pan and oil on medium-high heat.
2. Add the eggs to the pre-heated pan. Spoon over the hot oil on the egg white until they are done cooking.
3. Season with the thyme, salt and pepper.
