Slow Roasted Tomatoes

These things are nature’s little candies. Cooking tomatoes at an very low temperature allows the sugars to caramelize very slowly. Those caramelized flavors make them perfectly sweet and the perfect addition to just about any dish…or to just snack on.

8 oz cherry tomatoes
2 TBL extra virgin olive oil

1. Slice tomatoes lengthwise and lay the, out on a baking sheet.

2. Season the tomatoes with the olive oil, salt and pepper.

3. Place the sheet tray of tomatoes into a preheated 250 oven and bake them for 2-3 hours until they are dried out.

4. Serve them at room temperature or with a warm dish.
